It’s Pancake Day!

Today is one of those special days that sparks a simple kind of joy. There’s something a little bit magical about a day dedicated to food. Pancake day (or Shrove Tuesday) might take you back in time to pancake races in school or memories of watching badly flipped pancakes stuck on the kitchen ceiling in the hope that gravity will help it find its way back down to earth.

Make Your Own Pancakes

We all know that lockdown can be boring, so why not spend part of today trying out a simple pancake recipe -

  • 200g/7oz plain flour
  • 350-400ml/12-14fl oz milk, or ½ milk ½ water for a a thinner, lighter pancake
  • 2 large eggs to be lightly whisked
  • 1 tablespoon of vegetable oil
  • A pinch of salt
  • A dash of Vegetable oil

Add the flour, eggs, milk and salt to a mixing bowl and then whisk until it forms a smooth batter.

Take a non-stick pan or griddle and add your vegetable oil. Pour in your batter and leave on a medium heat until bubbles form. Flip the pancake and cook until the other side is a golden-brown colour.

Once your pancake is done you can go crazy with toppings, whether you opt for an American-style maple-syrup and bacon pancake or a Nutella and strawberry treat you will definitely find something to enjoy.

Alternatively, if you’re on the road today you may be able to find pancakes at a service station / truck stop, a well known restaurant with golden arches or you could simply skip all the baking and just nip into a supermarket instead.
